Beat the Heat… Treats!

Okay… I’m sitting here, in my car, at the laundromat because my washer just decided to give up…the sweat is dripping off the back of my legs (nice visual… I know). I’m sure you’ve all been in some kind of situation like this… Your mouth is dry, and you just want something cold and delicious. Thank to Pinterest, I’ve been able to find a few delicious ways to beat the heat!

Mango Lemonade

  • 3/4 C sugar (sub. 1/2 of sugar for honey if you’d like) ** I just used Splenda
  • 8 C water
  • 1 1/2 C lemon juice (fresh is always best)
  • 3 mangoes, peeled & pitted

Directions:  In a small saucepan, combine sugar and 1 cup water. Bring to a boil and stir to dissolve sugar, allow to cool to room temperature. Cover and refrigerate. Purée mangoes in blender and strain through a Sieve to rid the mix of fibers. Set aside. Remove seeds from lemon juice leaving the pulp. In a pitcher, stir together all of the ingredients. Serve immediately on ice, or put in freezer for mango slushy’s! *Delicioso!!*

For the next DYI beat the heat treat, I made some fruit bar popsicles. Not only are they delicious, they’re healthy!! HALLELUJAH!

Fruit Bar Popsicles

For this recipe, you need some popsicle molds (I got mine at Walmart, $2 for a 4-pack) and some Popsicle sticks.

  • 1 peach cut into 1/2 inch slices (about 1/2 c)
  • 2 kiwis peeled and sliced into 1/4 inch rounds
  • 3/4 C strawberries finely chopped
  • 1/2 C blueberries (I found it better to cut those in half)
  • 1/2 C raspberries
  • 1 1/2-2 C of fruit punch (I hate fruit punch, so I used light 100% white grapefruit juice)

Directions: Combine fruit in a bowl, place the fruit into the molds, pour just enough juice to cover the fruit and stick in the Popsicle sticks… and there ya have it! Let them freeze and enjoy 🙂 (This recipe serves 8 and takes about 6 hours to freeze.)

Alright, I can hear you all saying, but what about the alcohol?!? Here’s one for you winos, myself included. 😉 How awkward is it to sit by the pool with a glass of wine… Especially on a hot day… Forget about it. So how about we turn that glass of wine into a slushie?! And um… Who needs a straw? Give me a big spoon!

Riesling Slushies

  • 2 C hulled strawberries
  • 1 bottle Riesling
  • 1 Tbsp of fresh lime juice
  • 2 Tbsp of sugar

Directions: Reserve 1 cup of Riesling, cover and store in the fridge. In a blender, purée strawberries with remaining wine, lime juice, and sugar. Pour mixture into ice cube trays and freeze until solid. Purée ice cubes with remaining wine when ready to drink or serve.

Hope you enjoy these, and there are more on the way! Do you know of any other delicious treats? Share them with us @20sTweet!
