Healthy Eating Made Simple: Homemade Taco Salad

Tired of your oh-so-boring salad, again? I’ve got another concoction for you to try! Alright, so this may not be the healthiest salad for you to make… But it’s definitely better than a lot of other lunch options out there… And it sure is tasty! If I wasn’t such a picky eater, I’d probably add some tomatoes. You can easily add or subtract your favorites from this list as well. Added bonus? Munch away with a side of fresh fruit!

Homemade Taco SaladΒ 

Mix the following:

  • Chopped Romaine
  • Fresh Yellow Corn
  • Black Beans (drained)
  • Black Olives
  • Shredded Cheddar Cheese
  • Sliced Avocado
  • Tortilla Strips, for garnish

 

Drizzle a bit of Olde Cape Cod’s Lite Honey French dressing, and you’ve got yourself a salad. The best part? With all of those flavorful ingredients, you barely need to use any dressing!
